Pork Skewers with Vegetables

Fire up the grill and get ready for a flavorful adventure with these Pork Skewers loaded with juicy pieces of tender pork, vibrant red peppers, earthy mushrooms, and sweet red onions. This easy-to-make dish is perfect for summer barbecues, family gatherings, or a fun dinner at home.

Ingredients:

  • 500 g pork tenderloin or pork shoulder, cut into 1-inch cubes

  • 200 g mushrooms, cleaned and halved

  • red bell peppers, cut into 1-inch pieces

  • 1 red onion, cut into wedges

  • 3 tablespoons olive oil

  • 3 tablespoons soy sauce

  • 2 tablespoons balsamic vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes beforehand)

Instructions:

  1. Marinate the Pork:

    • In a large bowl, whisk together the olive oil, soy sauce, balsamic vinegar, minced garlic, smoked paprika, dried oregano, salt, and pepper.

    • Add the cubed pork to the marinade, tossing to coat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes (or up to overnight for best flavor).

  2. Prepare the Vegetables:

    • While the pork is marinating, prepare the vegetables. Cut the red bell pepper and red onion into pieces and clean and halve the mushrooms.

    • In a separate bowl, combine the vegetables and drizzle with olive oil, salt, and pepper to season.

  3. Assemble the Skewers:

    • Preheat your grill to medium-high heat.

    • Thread the marinated pork, cherry tomatoes, mushrooms, red bell pepper, and red onion onto the skewers, alternating the ingredients for a colorful presentation.

  4. Grill or bake the Skewers:

    • Place the skewers on the preheated grill. Grill for about 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred on the outside. The internal temperature of the pork should reach 145°F (63°C).

    • Alternatively, you can bake the skewers in the oven preheated at 180 degrees Celsius.

  5. Serve:

    • Remove the skewers from the grill/oven and let them rest for a few minutes. Serve the pork skewers warm with your favorite dipping sauces or sides, such as potatoes, rice, quinoa, or a fresh salad.
