This comforting dish combines the rich flavors of a whole chicken with the tangy taste of sauerkraut, making it a perfect meal for gatherings or cozy family winter dinners. Easy to prepare and incredibly satisfying, it’s a dish that everyone is sure to enjoy.

Ingredients:

  • 2 medium sauerkraut

  • 1 whole chicken

  • Red pepper (to taste)

  • Ground black pepper (to taste)

  • Salt (to taste, for the chicken only)

  • 4 bay leaves

  • 80 ml olive oil or sunflower oil

Instructions:

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

  2. Chop the sauerkraut into small pieces if necessary, ensuring that it is finely chopped for even cooking.

  3. Place the chopped sauerkraut in a large baking tray, spreading it out evenly. Create space in the middle and place the whole chicken on top of the sauerkraut.

  4. Season the chicken and the surrounding sauerkraut with red pepper, ground black pepper, and bay leaves.

  5. Season the chicken with salt, keeping in mind that the sauerkraut is usually salty enough. Mix the sauerkraut with your hands to evenly distribute the spices.

  6. Drizzle the oil over the chicken and sauerkraut to add flavor and moisture.

  7. Bake the chicken with sauerkraut in the preheated oven until the chicken is golden brown and fully cooked, about 60-90 minutes, depending on the size of the chicken. Ensure the internal temperature of the chicken reaches at least 75 degrees Celsius (165 degrees Fahrenheit).

  8. Optionally, sprinkle some additional red pepper over the chicken before serving for extra flavor and color.
