Chicken Satay with Peanut Sauce
Ingredients:
Chicken Satay
500 g Chicken Breast
200 ml Coconut Milk
1 tbsp Palm Sugar
1 tsp Mae Jum Thai Yellow Curry Paste
1 tsp Turmeric
Salt
Peanut Sauce
80 g Roasted Peanuts
1 tsp Mae Jum Thai Yellow Curry Paste (Can use Red or Massaman)
200 ml Coconut Milk
2 tbsp Tamarind (Puree or Juice)
2 tbsp Light Soya Sauce
3 tbsp Palm Sugar
1 tbsp Coconut Oil
Instructions:
Chicken Satay Preparation
Pour the coconut milk into a large mixing bowl. Add the Thai yellow curry paste, turmeric powder, and palm sugar. Stir well, breaking down the curry paste and sugar until the marinade is smooth and evenly coloured. Set aside.
Slice the chicken breasts into long, thin strips and add them to the marinade. Mix thoroughly, ensuring each strip is evenly coated and separated. Cover the bowl with cling film and refrigerate for at least 2 hours to allow the flavours to develop.
Peanut Sauce
Heat the coconut oil in a saucepan over medium heat. Add the Thai yellow curry paste and fry for 2 minutes until fragrant.
Stir in the coconut milk, light soy sauce, tamarind, and palm sugar. Bring to a gentle boil, then blend until smooth. Return to the pan and simmer for 10 minutes.
Meanwhile, crush the roasted peanuts into small pieces using a blender, pestle and mortar, or by placing them in a sealed bag and crushing with a rolling pin.
Add the crushed peanuts to the sauce and stir well. Reduce the heat to low and keep warm until serving.
Cooking the Chicken Satay
After marinating, remove the chicken from the refrigerator. Thread each strip onto a skewer in a loose "S" shape, securing it by piercing the skewer through the chicken several times. Repeat until all the chicken has been skewered.
Heat a grill pan, skillet, or barbecue to medium-high heat. Cook 4–5 skewers at a time for approximately 3 minutes per side, or until the chicken is cooked through and lightly charred. Cooking times may vary depending on the thickness of the chicken.
Transfer the peanut sauce to a serving bowl and serve alongside the satay skewers.
