Cape Malay Yellow Rice

Ingredients

  • 2 cups basmati rice or other long-grain white rice

  • 3 cups water

  • 100 g raisins

  • 1 tsp ground turmeric

  • 12 cardamom pods - crushed

  • 2 cinnamon sticks

  • (optional) 1 tsp brown sugar

  • ½ tsp salt

  • ¼ tsp white pepper

Garnish

  • 1 tsp fresh coriander leaves

  • 1 tsp lemon zest

Instructions

  1. Place the water, rice, and the remaining ingredients in a saucepan.

  2. Bring to a simmer over medium-high heat without the lid.

  3. When the entire surface is bubbly and foamy, cover with the lid, reduce the heat to medium-low, and cook for 12 minutes.

  4. Remove from the stove and let it rest for 10 minutes.

  5. Open the lid slightly to avoid releasing all the steam, then stir to combine the flavors and fluff the rice.

  6. Don’t worry if it looks a little wet; you will close the lid and leave it for another 5 minutes to allow the moisture to evaporate and the flavors to meld.

  7. Transfer the rice to a bowl, garnish with fresh coriander leaves and lemon zest, and serve immediately with your Cape Malay curry and sambals.
