Ingredients
3 tablespoons olive oil
Juice of 1 lemon
4-5 tablespoons white wine
1 garlic clove, minced
Fresh thyme and basil, chopped
1 teaspoon dried oregano
Salt and black pepper, to taste
1 cube fish stock (optional, for added flavor)
4 salmon fillets
shredded Parmesan cheese
Instructions
Prepare marinade:
In a bowl, combine the olive oil, lemon juice, white wine, minced garlic, chopped parsley, oregano, salt, black pepper, and the fish stock cube (if using). Mix well until combined.
Marinate salmon:
Place the salmon fillets in a shallow dish. Pour the marinade over the salmon, ensuring that each piece is well-coated.
Cover the dish and refrigerate for at least 1 hour to allow the flavors to infuse.
Preheat oven:
Preheat your oven to 200°C (400°F).
Prepare for baking:
Place the salmon and the marinade in a baking dish.
Cover the dish with aluminum foil.
Bake salmon:
Bake the covered salmon in the preheated oven for 20 minutes. This allows the fish to cook through gently and retain moisture.
Crisp the top:
After 20 minutes, carefully remove the foil. If desired, sprinkle grated Parmesan cheese over the top of the salmon fillets.
Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is golden and bubbly.
Serve:
Remove the salmon from the oven and let it rest for a few minutes before serving. Plate the salmon fillets with your choice of sides, and enjoy with a drizzle of any remaining marinade.
This salmon dish is not just tasty but also healthy, making it a perfect meal for any occasion!
