Ingredients

  • 3 tablespoons olive oil

  • Juice of 1 lemon

  • 4-5 tablespoons white wine

  • 1 garlic clove, minced

  • Fresh thyme and basil, chopped

  • 1 teaspoon dried oregano

  • Salt and black pepper, to taste

  • 1 cube fish stock (optional, for added flavor)

  • 4 salmon fillets

  • shredded Parmesan cheese

Instructions

  1. Prepare marinade:

    • In a bowl, combine the olive oil, lemon juice, white wine, minced garlic, chopped parsley, oregano, salt, black pepper, and the fish stock cube (if using). Mix well until combined.

  2. Marinate salmon:

    • Place the salmon fillets in a shallow dish. Pour the marinade over the salmon, ensuring that each piece is well-coated.

    • Cover the dish and refrigerate for at least 1 hour to allow the flavors to infuse.

  3. Preheat oven:

    • Preheat your oven to 200°C (400°F).

  4. Prepare for baking:

    • Place the salmon and the marinade in a baking dish.

    • Cover the dish with aluminum foil.

  5. Bake salmon:

    • Bake the covered salmon in the preheated oven for 20 minutes. This allows the fish to cook through gently and retain moisture.

  6. Crisp the top:

    • After 20 minutes, carefully remove the foil. If desired, sprinkle grated Parmesan cheese over the top of the salmon fillets.

    • Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is golden and bubbly.

  7. Serve:

    • Remove the salmon from the oven and let it rest for a few minutes before serving. Plate the salmon fillets with your choice of sides, and enjoy with a drizzle of any remaining marinade.

This salmon dish is not just tasty but also healthy, making it a perfect meal for any occasion!
