Malva pudding - an Amazing South African dessert

Ingredients

Pudding:

  • 140 g all-purpose flour

  • 5 ml baking soda

  • 2.5 ml salt

  • 200 g sugar

  • 1 large egg

  • 30 ml apricot jam

  • 14 g unsalted butter (room temperature)

  • 240 ml milk

  • 5 ml vanilla extract

  • 5 ml white or apple cider vinegar

Sauce:

  • 180 ml heavy cream (double cream)

  • 60 ml water

  • 100 g brown sugar

  • 57 g unsalted butter

  • 5 ml vanilla extract

Instructions

1. Prepare the Pudding:

  • Preheat the oven to 180℃ (350℉). Adjust as needed, based on your oven’s characteristics.

  • In a mixing bowl, cream together the butter, sugar, apricot jam, and egg until light and fluffy.

  • In a separate bowl, mix the milk, vinegar, and vanilla extract. Whisk lightly.

  • In another bowl, combine the baking soda, flour, and salt.

  • Gradually add the milk mixture and flour mixture to the creamed mixture, mixing well.

  • Pour into a lightly greased baking dish (approximately 30x15 cm) and bake for 45 minutes, or until a knife inserted comes out with spongy crumbs.

2. Prepare the Sauce:

  • In a pot, combine the butter, cream, brown sugar, and water. Bring to a boil.

  • Simmer for 3 minutes to deepen the flavor, stirring as you go.

  • Poke the pudding with a fork to help the sauce penetrate, then pour the sauce over evenly.
