12-14 cloves garlic (unpeeled)
4-6 shallots, peeled and halved
2-3 potatoes, sliced
1 sweet potato, sliced
200 grams broccolini, trimmed
2 tsp Italian spice mix
1 tsp salt
1/2 tsp black pepper
8-10 tsp butter
Instructions
Bake the Chicken Under Foil:
Preheat your oven to 150°C.
Place the chicken in a baking tray with a little water.
Cover the chicken and the tray with foil.
Bake for about 45 minutes.
Prepare the Chicken and the Vegetables:
After 45 minutes, place the chicken breast-side up in the baking tray.
Rub the chicken with salt, pepper, the Italian herb mix, and the juice of one orange.
Spread the orange slices, potatoes, sweet potatoes, broccolini, garlic, and shallots around the chicken. Coat everything evenly with butter, salt, pepper, and the Italian herb mix.
Roast the Chicken:
Increase the oven temperature to 190°C.
Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
Turn the chicken thigh-side up, sprinkle with spices again, and bake until the skin is golden.
Rest and Serve:
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Serve the roasted chicken with the vegetables on the side, drizzling the pan juices over everything.
Enjoy your delicious roasted chicken with oranges and vegetables!
